Lately I have been trying to stay away from traditional white rice with the exception for when I go out to eat sushi. A friend of mine showed me this mixture that I could use as a substitute when I want more of a carby base for my meals and it actually ended up being extremely satisfying. I use the wild rice and red quinoa from Trader Joe's and mix it together in equal parts. Rinse in cool water and let it soak for at least 30 minutes but not more than 2 hours. Cover with with liquid using either water, chicken, or vegetable stock. I personally enjoy using chicken stock. Place on medium heat and boil until it has been cooked through. Enjoy!
