Roasted Asian Kale Salad

This is hands down the best salad I have ever eaten. Better than any salad I've eaten at a restaurant, it is a must try at home! 100% Vegan



Roasted Asian Kale Salad


Raw Salad:

1 bunch red kale

1 bunch curly kale

1 bunch dinosaur kale

1/2 english cucumber

4 tablespoons red onion diced

4 green onion sprigs

1 small carrot diced

1 lemon

Roasted:

1 zucchini

1 medium red jewel yam

1 ear of sweet corn

Asian Roasted Chickpeas

Spicy Sesame Oil

Avocado oil

Mild Sriracha Seasoning

Onion salt


Salad Dressing:

Spicy Vegan Cashew Dressing


1. Wash and chop kale into slices removing them stems.

2. Massage kale with juice of 1 lemon let sit while you prepare the rest.

3. Chop your english cucumber, carrot, red onion, green onion into desired sized pieces. (I like mine squared off)

4. Top salad with roasted veggies

5. Toss salad with the Asian Roasted Chickpeas and Spicy Vegan Cashew Dressing


Roasted Veggies:

1. Preheat oven to 400 degrees

2. Chop zucchini and yam into squared off pieces

3. Toss zucchini in the spicy sesame oil and mild sriracha seasoning

4. Toss yam with avocado oil and onion salt

5. Put the zucchini, yam, and corn kernels onto a baking sheet and bake for 30 minutes or until done
